The best way to cook Prime Rib, or the Ribeye Roast, is by roasting it in the oven to your desired doneness— fat side up— and allowing it to rest tented by aluminum foil for 10-15 minutes before slicing. It’s also important to remember the internal temperature will continue to rise 10 to 15 degrees when it comes out of the oven.

All our cattle are pasture-raised on the grasses in Northern California and Southern Oregon. They are finished on a diet of hay and potatoes for three months. Finishing cattle on potatoes gives the beef a rich, luxurious full flavor that can't be achieved with grass or grain.
