These Black Truffle Slices are made from the highest quality European Black Truffles (Tuber aestivum), expertly preserved in olive oil. Enjoy this delicacy on pasta dishes, pizzas, with eggs, or with any other recipe you want to enhance with the luxury taste of truffle.

Fresh truffles are sliced and preserved at the peak of the season, when they are at their most flavorful. Black Summer Truffles (Tuber aestivum) are usually only available from June to August. However, the preservation process extends the life of the truffle by as much as 18 months, allowing you to enjoy the incredible taste of truffle at any time of year.

The highest quality truffles are shaved into 2mm thick slices. The slices are then soaked in a salt brine to enhance their natural flavor, before being preserved in olive oil.

What is the weight of the truffles alone? Can you talk about the truffle flavoring and why is it used?

The Black Truffle Slices 80g contains 56g (1.98oz) of truffles.

The production of any truffle product requires some form of flavouring. Fresh truffles can be used and eaten like any other fresh fruit, vegetable or fungi, but if they are to be used in products then they need to be cooked in some way to kill off any harmful bacteria. Truffle just placed in olive oil to create truffle oil without any treatment can lead to botulism and severe poisoning, even death.

All truffles for use in truffle products need to be cooked to kill off the bacteria, but unfortunately this also changes and diminishes the truffle flavour. A flavouring must then be added to the product to recreate the truffle flavour. This can be done using a natural flavouring or artificial flavouring. The natural flavouring is usually mushroom based, and gives a feint aroma and taste but more like the mushrooms the flavouring is based on rather than truffle. Artificial/synthetic flavourings are created by recreating the chemical compounds in truffles that give the truffle aroma and taste. 2,4 dithiapentane is the most commonly used base for the flavouring.

At TruffleHunter we created our own artificial truffle flavouring by working with a number of flavour specialists and Michelin Star chefs to create a flavouring that we believe is closed to the real smell and taste of truffles. Many truffle product manufacturers use cheap off the shelf truffle flavourings which, in our opinion taste more like the chemical base than actual truffles. We believe that our flavour is the best available and the closest to the true truffle flavour.
