The Shinobu Distillery is located in Niigata prefecture, Japan. In this distillery lives a passionate whisky lover and an experienced brewer, Mr. Ken Usami. An innovator by heart, Mr. Usami always dreamt of creating a local whisky distillery in the same location as the craft beer brewery he founded 20 years ago. In 2017, he obtained the first whisky license for Niigata and started his journey of becoming a distiller. While the distillery was still under construction, Mr. Usami began experimenting with blending world whiskies to create the unique flavors of Japan. He carefully selects the finest ex-sherry and ex-bourbon whisky casks from around the world, then finishes them with precious Japanese Mizunara oak for a unique fusion of flavors that's smooth and easy to drink.
The Japanese concept of “Shinobu” represents endurance, perseverance, and patience. Crafting Shinobu Japanese Whisky requires all of these qualities, as the master distiller must age each barrel for the precise amount of time before they can be meticulously blended and create the perfect flavor. Each bottle carries on the history and tradition of endurance and perseverance of the Japanese Warrior class.
Shinobu Lightly Peated Pure Malt opens with the telltale aromas of candied orange peel, toffee, sweet smoke, and toasted hazelnuts; augmented by distinctive herbal tea and spice notes. The palate is surprisingly mellow, with more fruit-forward characteristics bolstered by pepper and spice on the finish.
Mr. Usami Ken blended and aged the Shinobu Pure Malt Whisky 10YO Lightly Peated in sherry and bourbon hogshead casks for more than 10 years, before finishing them in precious Japanese Mizunara Oak. Famous for imparting rich, luscious flavors of apples, pears, cloves and nutmegs, Mizunara Oak has been used in Japan since the 1930s and is now sought-after by whisky makers around the world. The peated flavors brings the SHINOBU 10YO Pure Malt Lightly Peated Whisky into another aspect, with complex aromas and different layers of tastes of seaweed and smoky flavors.
