The Tamahagane San Kyoto 7 inch Santoku Knife is a versatile, all purpose knife that can be used interchangeably with a chef's knife. Featuring a 63-ply stainless steel construction, with 31 layers on each side, it offers a beautiful and distinctive damascus pattern. The outside layers are softer and more stain-resistant than the cutting edge in order to protect it. San Kyoto knives are balanced with a stainless steel weight which attaches to the tang, adding beauty and fantastic balance to any kitchen.
