Can the Crispy mode be reduced below the default time of 15 minutes, or be bypassed when adjusted?

Yes, it can be. You can adjust it with the + / - to your desired time or bypass it entirely.

You can also automatically enter Crispy Mode by pushing the - button twice upon turning it on.

Can you add additional ingredients to the rice before cooking?

Yes, you can add a wide variety of ingredients before cooking.
