With the Kanso Series, Shun Cutlery has taken away anything that doesn’t matter and perfected everything that does: high-performance steel, a razor-sharp edge, perfect balance, and precision cutting control.
The steel is Japanese AUS10A—a highly refined, high-carbon, vanadium stainless steel that takes a razor-sharp edge and holds it longer. Kanso's Heritage finish hides scratches and lends a beautiful, natural look that only improves with age. Like all Shun knives, these blades are sharpened to a 16° cutting angle on each side to cut cleanly through food. The full-tang construction offers strength, balance, and improved control.
Each handle is crafted from tagayasan, or wenge wood, which is also known in Japan as “iron sword wood" thanks to its exceptional hardness and durability. The contoured shape provides an easy and comfortable grip so you can prep meals with ease.

FAQ
Yes, there is some chance for corrosion around the screws in the handle if the knife is improperly cared for. It uses highly stain-resistant steel for those components, however if exposed to water for a long period of time, the steel will eventually show some signs of corrosion. For this reason, it's recommended to hand wash the knives and put them away clean and dry every time. If these steps are taken, the chance for corrosion anywhere on the knife is as close to zero as you can possibly get.
How often do I sharpen the knives and do I need a specific type of sharpener for this knife set?Shun knives are hardened to 60-62 HRC, so that they will hold their edge much longer than most other knives. Sharpening intervals are dependent on how often the knife is used, the cutting board it's used upon, and the foods it has cut. Generally using a honing steel once a week to re-align the edge and full sharpening once a year are advised.
