The Crab Captain's Vinaigrette is a delicious recipe from a Pacific Northwest crab boat captain. To serve, simply let the vinaigrette thaw to room temperature and then shake or stir vigorously to mix the ingredients. Serve in a small dipping bowl take a hunk of crab meat, dunk, and enjoy!
Storing
These fully-cooked Merus sections can be stored frozen for up to two months. Once thawed, you can store your crab for up to three days in the refrigerator. Pack the crab sections in ice and cover with a damp towel for the best results.
Thawing
To thaw, wrap the frozen crab in paper towels and place them in the refrigerator to thaw overnight.
Preparing
The Merus Sections can simply be thawed and served chilled. If you prefer to warm your crab, steaming, boiling, and baking (recommended at 275Ā°F) are the most common options. Usually under these methods, crab takes only 5-7 minutes to cook. Be careful not to overcook your crab, as it will reduce the texture and taste.
Serving
The traditional way to serve your fully-cooked crab is with a simple accompaniment of melted butter. Over the years, top chefs have derived their own creative touches to serving this special meal. This includes a mix or garlic, lemon juice, and olive oil, or experiment with your own creations!
Choosing the Right Beverage
Dry white wines with a hint of sweetness make the perfect partner for your crab sections. SeaBear's personal recommendation is a Pinot Gris, though a dry Riesling or Sauvignon Bland will also work quite well. Well chilled malty ales are also very delicious. For a non-alcoholic alternative, try either a fresh-made lemonade or fresh-brewed iced tea with lemon.
Cleaning Up
Finely crush two saltine crackers in your hands, then rub your hands together just as you would if you were washing them with a bar of soap. The cracker crumbs will absorb any lingering crab odor.
