Following the harvest of Long Island’s iconic potatoes, farmers plant locally harvested Winter Rye as a cover-crop on the surrounding farmlands to maintain the soil. Rye is a deep-rooted grain which farmers refer to as a 'cleansing grain,' and as a result, the flavor is very terroir dependent. Surrounded by vineyards, Long Island's rye tends to have a spicy sweetness unlike anywhere else.

The Big Stick is a remarkable example that reveals the true raw spirit of this locally planted rye. Bottled at 121 Proof Cask Strength, it is pot distilled from a mash bill of 93% Long Island Estate-grown Winter Rye and 7% malted barley. This small-batch whisky incorporates the use of Champagne yeast, which allows for a 12-day low-slow fermentation that is 4-times longer than your typical rye. It’s an impressive amount of esters and florals offer more flavor than heat.

Tasting Notes: A lovely bronze/auburn color; ideal, flawless purity. Defining fragrances of salted crackers, prune, new leather, & loose leaf tobacco.
