Sel Gris gets its name from the mineral color it picks up during the harvesting process. It's a coarse granular sea salt popularized by the French that comes from the same solar evaporation salt pans as fleur de sel. Sel Gris is coarser than fleur de sel but is also a moist salt, typically containing 13 percent residual moisture. Its flavor is more concentrated than regular table salt, and is great for bringing out favors as a cooking salt and a finishing salt.
