Oliflix (oh-lee-fleesh) is an award-winning, premium organic extra virgin olive oil from Catalonia, Spain. This delicate blend of organic Arbequina & Empeltre olives produces a unique flavor that has been recognized internationally. Located adjacent to a nature and wildlife preserve, Antonio Rey Solé inherited his centuries-old olive orchard from his ancestors. Like his forefathers, he has never used a pesticide or fertilizer and does not even water his orchards. He believes the natural stresses associated with rain and drought improves the health of his trees and the quality of their fruit.

Antonio's olives are harvested daily by hand and crushed the same evening using granite stones. They are then cold pressed at ambient winter temperatures before being gravity separated and slowly decanted in underground ceramic tanks. Instead of using the modern, high-speed, temperature-controlled, automated, self-contained stainless steel processor and centrifuge, Antonio prefers the traditional process because "It's the only way to make an olive oil of uncommon quality."
