Mico Tequila traces back to the small town of Atotonilco in the Highlands of Jalisco. Born in Fiji, partners Ajendra and Subir Singh set out to produce a tequila reflective of the ripe, fruit forward agave notes of the highlands. Master distiller Karina Aguilera Rojo—one of very few female master distillers in Jalisco—works diligently to select the highest quality agave. This process is done exclusively using time honored methods past down by the Nunez family of Tequila El Viejito, NOM 1107. The Nunez family has produced tequila in the highlands for over 85 years and are integral partners in Mico.

Deceptively gorgeous in its simplicity, Mico Blanco is crafted in small batches with only three essential ingredients: water, 100% Blue Weber Agave, and time. Mico Blanco is produced from hand selected Blue Weber agave plants from the highlands around Atotonilco, Jalisco where there are reddish clay and volcanic silica. Once distilled, it is rested in stainless steel tanks for a period of time before its bottled.

Agave are remarkably hardy plants that take about seven years to mature, and are harvested by expert Jimadores who have mastered the art over generations. The plants are brought to the distillery where each one is split in several pieces before it is slow cooked in brick ovens that bring out the maximum agave flavor. The cooked agave is then shredded and crushed in a roller mill and the juice fermented in a natural, but controlled environment. Fermentation is the most integral part of making Mico Tequila because it is during this natural process that the product develops its unique characteristics. The yeast, the climatic conditions, and the environment play an important part in this process.

Herbaceous, yet incredibly pure—Mico Blanco is a study in contrasts. It opens on a floral nose and finishing with a bite for a strong yet approachable character. It is the spirit of Mico captured in a glass. Clean, clear, uncluttered. Like liquid light.

Richly layered, yet subtly sublime, Mico Reposado is confidence, distilled. This tequila is aged in American Oak whiskey barrels and finished in Napa Valley Cabernet barrels to create warm vanilla notes that marry with the tequila’s natural agave edge. Mico lets instinct guide when their reposado is ready—judging the old-fashioned way by taste and smell, and taste again. The result is a Tennessee-inspired finish that doesn’t forget its Jalisco roots. Smooth with just the right amount of bite, this tequila is bold and impressionistic long after the last drop.

Mico Añejo's secret ingredient? Time. Time to rest and time to develop. This tequila is aged in premium, small batch Kentucky straight bourbon whiskey barrels for an average of 15 months. It is then extra matured and finished in the finest Alexander Valley Cabernet Wine barrels. The silky fruit bouquet of a full-bodied Cab meets the rugged refinement of tequila for a complex, rich finish with notes of tobacco spice and dried fruit. Velvety, smooth, and character-rich, Añejo warms from within. The full body and toasty flavors unfold naturally with each sip. It's a celebration of the process that finishes strong and is designed to be savored.
