#58 Paring Knife
Product Description
The #58 Paring Knife is hand forged from carbon steel with a shade-dried oak handle. This curved blade paring knife is just the right size for zesting citrus, peeling a pear, deveining shrimp, or other precision tasks.
This collection was crafted by Master Shin In-Young, a 5th generation knife-maker from South Korea. In 2016, Master Shin was named an Intangible Cultural Heritage Treasure of Korea for his skill and contributions to the trade.
Master Shin repurposes the steel from railroad tracks to craft his knives and tools. This carbon steel is rich in manganese and can be heated to a very high temperature, making it wear-resistant and good for cutting. The steel is hammered a thousand times to reach the thin and sharp edge. The wood handles are slowly dried for years so they are lightweight, strong, and rot-resistant.
