Escargots de Bourgogne Sauvages, or Burgundy Snails, are a timeless French delicacy and are finally available in the United States. The preeminent purveyors in Burgundy, Henri Maire and La Maison de l’Escargot, have been satisfying the most discriminating palettes in France since 1938 and 1894 respectively.

The Luxury Hors d'oeuvres Collection includes 4 dozen cooked snails, stuffed in the shell with Pamplie AOC French butter, fresh parsley, and garlic. The snails are individually quick frozen—a method that doesn't enable large ice crystals to form. Since each piece is individually frozen, particles do not cohere, and the final product is not frozen into a solid block.

Made and prepared in France, these 4 trays of 12 simply require heating at 375 degrees for 10-12 minutes before serving. The butter and garlic will cook the snails through. The tender texture and clean, woodland flavor make these Burgundy Snails the perfect first course.

The bundle also includes White Sturgeon roe, Russian cocktail blinis, and two types of bottarga to complete your table.

White Sturgeon (Transmontanus) is a fine distinguishable roe with a slightly firm but delicate texture. The flavor ranges from buttery to nutty with a touch of sweetness and can be compared to the taste of the Caspian sea wild Ossetra caviar.

Mullet Roe Bottarga and Ground Mullet Roe Bottarga are sustainably sourced from the Gulf of Mexico, off the Florida coast, and hand-cured with great care in the Hudson Valley. This salted and dried mullet fish roe is extremely rich in protein and omega-3s, with color ranging from gold to amber depending on aging, and a firm but gentle salty flavor. Use bottarga to season and bring umami to pasta, risotto, salads, and other dishes or the perfect finishing touch to bruschetta.
