Hand selected at harvest and perfectly aged, these Tajima Prestige steaks are the pinnacle of the American-raised Wagyu world. These absolutely stunning cuts fall somewhere between A4 and A5 Japanese Wagyu, about 8-9 BMS on the Japanese marbling scale. Like fois gras, a little goes a long way.

Ships frozen on dry ice. For best results, place the steaks in a pan or dish and allow them to thaw over the course of 24 to 48-hours in your refrigerator. Season the steaks 3-4 hours in advance to allow the salt to penetrate deeply into the steak, regardless of cooking method.
