Product Description
Perfect for grilling, this collection from Lone Mountain Wagyu offers exquisite flavor, superior texture, and the incredible marbling for which Wagyu beef is known. Their beef is all 100% full-blood Wagyu and never crossbred with any other breed of cattle.
Prep Tips
Thaw the prized Wagyu product as you see fit (see below under "Handling and Thawing" for deeper guidance.) Bring thawed steaks to room temperature for 30 minutes or so.
For best results, cook your Wagyu to no more than medium rare.
Handling & Thawing
Not digging into your Wagyu right away? Place your vacuum-sealed package in your freezer upon delivery. Your meat should be good for up to 12 months in your freezer.
Have some time? Thaw your beef in the refrigerator for up to 48 hours. This is the best way to thaw, allowing the Wagyu to retain all of its natural juices for an exceptional flavor.
Hungry sooner? Keep beef in the vacuum-sealed package and submerge in a bowl of cold water for a few hours.
Change of dinner plans? Thawed steaks still in the vacuum-sealed package can be safely refrozen as long as they have remained refrigerated and have not been thawed for longer than a day.

Yes, the beef is 100% fullblood Wagyu beef. It's never been crossbred with any other breed of cattle.
What does it mean for “All Steaks Are Wet Aged For 56 In Their Own Juices”?Wet-aging is just another way to make meat more tender when dry-aging is not possible. The advancement of vacuum-sealed beef has allowed us to age the beef at refrigerated temperatures. The absence of oxygen in vacuum-sealed beef, allows the enzymes to tenderize the beef.
This is not the same as fermenting kimchi. Very different processes. Fermenting is to preserve food by breaking down carbohydrates using yeast or bacteria.
What grade wagyu is this? What kind of wagyu is it?The Wagyu we sell has a range of at least 24% IMF upwards of up to 35% which is double the score that you need to be considered Prime by the USDA.
Our Wagyu is mostly Tajima but always 100% full blood, never crossbred with any other breed of cattle.
