Does this have any pockets or separate storage areas or is it like a large open bag?

The interior of the Joyride is a large stuff sack with a PVC liner, it has 2 exterior pockets on each side and an expandable front pocket with a flap and an open slip pocket behind the front pocket.

Can the bag hold water?

It doesn't have a hydration pocket it is just a stuff sack on the inside, you can put a water bottle on the outside pockets.
