No, it cannot be removed.

Does the blue screw (rotor) in the back rotate? If yes, at what rate does it turn?

The rotor works as an automatic movement whenever you will move your arm/watch the rotor will turn along with it.

Is there anyway to remove the leather band so I can have a custom rubber strap made and fitted?

Yes, the strap can easily be removed by a jeweler and a different strap or band can be added.
