This special Classic Chinese Cleaver brings Forge To Table back to their roots. Alex Zheng's grandfather first started the forge nearly 100 years ago with his version of the classic Chinese chef's cleaver. The classic cleaver is (still) the most widely used knife across China.
Unlike European cleavers, a Chinese cleaver of this style is crafted for balance and performance akin to a Chef's knife than a heavy butcher’s cleaver. Prepare to be astounded while this beastly-looking blade finely minces and dices while remaining comfortable to use for an entire kitchen shift.
The subtle curvature of the blade also allows for smooth transitions from dicing to rocking-chopping. For durability, this blade's tang runs through the entire length of the handle. The even weight distribution puts the power where you need it for any chopping task across the entire edge.

FAQ
The Classic Cleaver features a classic Full Tang of a Chinese cleaver with the steel of the knife hammered directly into the handle itself. We've certainly never seen any issue like this in our years of work on this classic knife and any chance of this is protected by our Warranty which covers proper use of the knife and any manufacturing defects.
Can you lop a head off with it?It depends what kinda head is in need of chopping, but for chicken heads, duck heads, and other medium to small poultry is easy work for this cleaver. Fish heads as well can be removed and split with ease too.
Can the cleaver knife be used to cut up into small pieces a whole chicken and big-boned meat?This cleaver is a great option as both a chopper for vegetables to larger projects.
It can absolutely make quick work of a chicken and cutting up large pieces of meat is totally in its wheelhouse too.
You will still need to use care if cutting through large bones, raw or cooked since it really comes down to the size of the bone and the condition. Out of an abundance of caution we don't recommend cutting large bones with it.
These blades are taken to an approximate 21 degree angle, this does vary some due to the hand sharpening, and our cleaver we lean to a wider angle, closer to a 23 degree given its focused uses.
Can this cleaver cut through bones?You should absolutely be able to cut through Ox Tail, especially when following the joints.
Some bones will be difficult but Ox Tail should be certainly doable with this cleaver.
