El Buho Espadin is made by maestro mezcalero Octavio Jiménez Monterroza with agaves from Santa Maria Zoquitlan, Oaxaca. This mezcal is made with 85% wild maguey Tobala and 15% cultivated maguey Espadin. The agaves are tahona crushed, fermented for 9 days in pine vats, and then double distilled in a copper pot still. It was aged in stainless steel tanks for 6 months. This mezcal has notes of caramelized pineapple, sea salt, and buttered popcorn.

El Buho Especial Cuishe is a limited release made with wild maguey Cuishe (agave Karwinskii) sourced in San Pablo Huixtepec, Oaxaca. This mezcal is made in small batches that are traditionally produced in Santiago Matatlan. The first release of this was made in 2017 by Octavio Jiménez Monterroza. Lot 2 was was aged in stainless steel for 12 months.

El Buho is known for making a quality, affordable mezcal from agave Espadin, but is now expanding into the wild agave territory with this limited edition agave Tepeztate. Production of El Buho mezcals are overseen by the family matriarch Elsa Jaurez Mendez and her husband, Master Mezcalero Octavio Jiménez Monterroza. The agaves in Lot 2 were sourced in Santa Maria Zoquitlan, Oaxaca and the resulting mezcal was rested in stainless steel tanks for 20 months. According to El Buho, agave Tepeztate requires a 3rd distillation due to its low sugar content.
