The high-carbon 5Cr15Mov steel blades offer the optimal balance between weight, hardness, and edge retention for long-lasting razor-sharp edges out of the box. Each blade has been tumbled and acid stonewashed for a stable oxide barrier between the steel and environment. This creates a non-reflective surface while enhancing corrosion and rust resistance, reducing blade maintenance and preserving the blade appearance by hiding scratches unlike inferior coated blades that chip and peel. All interceptor knives are honed to a 20° cutting angle to cut neatly and with precision through everything from delicate fruit to tough proteins.
