The distilling of agave is a proud tradition that has been passed down from one generation to the next for centuries throughout Mexico. Legally, tequila can only be produced in the state of Jalisco, while mezcal (translating to "oven-cooked agave" in Nahuatl) can be traced back to pre-Spanish Mexico.
