With only three ingredients, Copalli creates a single-estate rum that is clean and organic. Located in the heart of the rainforest in Southern Belize, they combine fresh pressed juice from organic sugar cane, pure canopy water, and yeast for a spirit that is both smooth and refreshing. This set of award-winning rums can be enjoyed neat on the rocks, or as a powerful base in your favorite rum cocktail.
After fermenting organic fresh pressed sugar cane juice, Copalli double distills their White Rum in both a pot and column stills before blending the two distillates. This is then followed by resting the finished product in stainless steel. This creates a rum so smooth it can be served straight on the rocks or enjoyed in your favorite rum cocktail. The nose on the Copalli White has scents of vanilla, coffee bean, and grass, while the taste is full of fruit like strawberries, lime, and citrus zest.

The Copalli Barrel Rested Rum is first fermented with organic fresh pressed sugarcane juice then double distilled in Copalli's full-bodied pot before aging it in American Oak used bourbon barrels. The result is a rich, sweet rum that's delicious both neat or as the base of your favorite rum cocktail. The nose of the Barrel Rested Rum is full of vanilla, oak, and leather. It leads into a notes of spices like cinnamon, nutmeg, blackberries, and tobacco on the mouth.
