This Boning Knife has a medium length blade, it is firm and it has a thin shape to severe the meat from the bone perfectly. It is used especially by butchers, but it can be used at home too, to cut small cuts like rabbits and chickens. It is also often used to separate the lean meat of the ham from the bone, and is perhaps the only kitchen knife that can be held just like a dagger.
