Product Description
Catsmo Artisan Smokehouse was founded in 1995 by Robert Simon. From the early days of smoking salmon in a garage to today, the business has maintained its fundamental principles of high-quality fresh fish, an artisan smoking recipe, and close relationships with skilled chefs.
Catsmo cold smoked salmon is fresh never frozen and smoked in varieties of fruit woods. The hot smoked salmon is flaky with a moderately drier texture than the cold-smoked.
Buttery Scottish smoked salmon is scotch-cured and smoked using oak wood as opposed to fruit woods. The gravlax is cured with brandy and a delicate mixture of spices, and then covered with finely chopped dill.
Catsmo candy smoked salmon is cured with locally-sourced, organic Crown Maple® syrup, infusing the salmon’s tantalizing smokiness with a sweet maple flavor. Finally, the smoked trout is gently smoked to retain its natural moisture and flaky texture.
