The traditional butcher took a hit when more people started opting for mass-market convenience over quality, locally-raised food. In the process, we became less aware of the food on our plates. Inspired by an old-fashioned butcher’s chart this letterpress print reminds us that knowing the different cuts of beef can help determine the best selection for a dish, cooking method or flavor profile. Made in Atlanta, Georgia, by a craftsman who individually rolled 110-lb, all-cotton paper onto custom plates — giving them a deep, crisp imprint — these prints were then duplexed with a second sheet to create a 220-lb finish.
